We use free-range eggs in our dishes and most of our vegetables come from farmers at the Ljubljana market. Wheat and buckwheat flour are from the Maršet mill in Vodice, milled using a traditional stone mill process. In all buckwheat dishes we use only 100% buckwheat flour, which is basically gluten-free, but may contain traces of gluten. It's a superfood that has a lot of health benefits and makes our buckwheat pancakes and buckwheat clouds full of protein, antioxidants, fibres, and easy to digest.
